How Do You Make Clear Ice Cubes?
Clear ice cubes are made by controlling the direction in which water freezes. When water freezes from several sides at once, dissolved air and minerals become trapped inside the cube, creating a cloudy center. The freezer should remain at a stable temperature throughout the process. Very rapid freezing can create stress lines and cracks, while repeated temperature changes may produce uneven layers.
Large blocks normally make clearer cubes than small conventional trays because there is more time and space for dissolved air to move away from the freezing front.
Cutting and Tempering Clear Ice
Once the clear portion has been separated, mark the block according to the glass size. A large whisky glass may suit one substantial cube, while highball drinks usually need longer rectangular pieces.
Allow freshly frozen ice to temper for a few minutes before cutting. Extremely cold ice is more brittle and can shatter. After cutting, return the pieces to the freezer in a sealed container so they do not absorb food odors.
Clear ice may also crack when liquid is poured over it immediately. Brief tempering before service reduces the temperature difference and helps preserve the cube.
