How To Steam Milk for Latte?
Steaming milk for a latte requires two connected stages: adding a controlled amount of air near the beginning and then creating a whirlpool that breaks large bubbles into smooth microfoam. The finished milk should look glossy, pour as one integrated liquid, and feel warm without tasting cooked.

Prepare the Milk and Pitcher
Begin with cold milk and a clean, chilled or room-temperature pitcher.
Fill the pitcher to an appropriate level below the start of the spout. Leave space for the milk to expand.
Whole dairy milk is relatively forgiving because its fat and protein structure supports a creamy texture. Low-fat and plant-based products behave differently, so the barista may need to adjust air introduction and final temperature.
Choose a pitcher large enough to create circulation but not so large that the steam tip cannot work effectively below the milk surface.
Purge and Position the Steam Wand
Briefly purge the steam wand before placing it in the milk. This removes condensed water from the tip.
Position the wand slightly off-center rather than directly in the middle. Place the tip just below the surface.
Start the steam fully according to the espresso machine’s instructions.
A quiet tearing-paper sound indicates that small amounts of air are entering. Loud splashing usually means the tip is too high, while complete silence may mean it is too deep.
Create Microfoam, Not Large Bubbles
Introduce air only during the early part of steaming.
As the milk expands, lower the pitcher slightly to keep the tip close to the surface. Once enough volume has been created, raise the pitcher so the tip moves deeper.
Maintain an off-center position that creates a strong circular movement. The whirlpool folds the new foam into the liquid milk and reduces visible bubbles.
Stop adding air before the milk becomes hot. Continued surface aeration creates dry, stiff foam that separates from the coffee rather than flowing through it.
Stop at the Correct Temperature
Many baristas finish dairy milk around 55–65°C, depending on the drink, milk, equipment, and customer preference.
A thermometer improves repeatability during training. Experienced baristas may also judge temperature by holding the outside of the pitcher, but touch is less precise.
Milk heated too far can lose sweetness, develop a cooked flavor, and become more difficult to texture.
Turn off the steam before removing the wand from the milk. This prevents splashing.
Wipe and purge the wand immediately after every use.
Finish the Texture Before Pouring
Tap the pitcher lightly on the counter only when visible surface bubbles remain. Swirl the milk firmly until it becomes glossy and uniform.
Do not leave steamed milk standing for a long period. Foam and liquid begin separating when the pitcher remains still.
Pour promptly into freshly prepared espresso.
For latte art, begin from a slightly higher position so the milk enters beneath the crema. Move the pitcher closer to the cup when the white pattern should appear.
Consistent pouring depends on both milk texture and spout geometry.
