How Much Milk Is in A Latte?

2026-07-30

A latte normally contains one or two shots of espresso combined with substantially more steamed milk and a thin layer of microfoam. The exact milk amount depends on cup size, espresso dose, desired coffee strength, and the amount of expansion created during steaming.

An 8 oz latte may use approximately 150–180 ml of cold milk, while a 12 oz drink may require around 220–260 ml. These are practical starting ranges rather than universal rules.

Cup Size Determines the Starting Quantity

A small latte with a double espresso needs less milk than a large takeaway drink.

The final cup contains:

  • Espresso

  • Liquid steamed milk

  • Microfoam

  • A small amount of retained liquid in the pitcher

Milk expands during steaming, so the starting volume should be lower than the final milk volume in the cup.

Do not fill the pitcher completely. Space is needed for milk circulation and controlled expansion.

Match the Pitcher to the Drink

A 350 ml pitcher is practical for one small latte or cappuccino. A 600 ml pitcher is more suitable for a larger drink or two smaller servings.

The pitcher should normally begin partially filled rather than nearly empty or completely full.

Too little milk may not create a stable whirlpool because the steam wand cannot remain correctly positioned. Too much milk may overflow as air is introduced.

The shape of the pitcher affects how the milk rotates. A clear interior and suitable diameter help the barista observe expansion and control the steaming process.

Latte, Cappuccino, and Flat White Differences

These drinks may use the same espresso base but differ in milk quantity and texture.

A latte generally contains more steamed milk and a relatively thin foam layer.

A cappuccino normally has a stronger foam presence and may use less liquid milk for the same cup size.

A flat white is typically smaller or more coffee-forward, with a thin, integrated microfoam texture.

Recipes vary between countries and cafés. Commercial operators should define their own cup volume, espresso dose, milk amount, and texture standard rather than depending only on drink names.

Reducing Milk Waste

Milk remaining in the pitcher after every drink increases operating cost.

Waste can be reduced by:

  1. Defining milk fill lines for each cup size

  2. Matching pitcher capacity to the recipe

  3. Training staff to control expansion

  4. Avoiding repeated reheating

  5. Measuring the cold milk before steaming

  6. Using separate pitchers for different milk types

  7. Reviewing actual usage during busy service

Previously steamed milk should not be repeatedly mixed with fresh milk without an approved food-safety procedure.

Cafés should also clean the pitcher after every use to prevent dried milk from collecting around the spout or interior wall.
